I have an auto insurance claim in Ohio. I'm wondering if I can record the insurance company without their permission and can I use the tapes in court?

No, you may not tape record a person without their knowledge absent a COURT ORDER to do so. Otherwise you need their express consent before taping and/or using those tapes in an adversary proceeding.
This is the reason that the insurance company has to tell you that phone calls are being recorded. The best advice is to let the adjuster know at the outset that you want to record the phone call to avoid even the appearance of doing something improper.
